Don't put our Manchego in the same category as other grocery store brands: we have the real thing. Our Manchego is from the specific location as required by the European Union, La Mancha. Ours is also made from an ancient breed of sheep, Manchega, that have been used to make Manchego since the Bronze Age (3200-600 BC). Manchego is unpasteurized and aged in natural caved for two months before it reaches us. Its strict production process and natural aging give our Manchego its nutty, sweet flavor. Pair this with membrillo for a very traditional pairing, serve with fruit after dinner, or enjoy it on its own! Pair with Tempranillo wines.
